WHAT IS KOMBUCHA? I HAVE
HEARD THAT IT IS A MUSHROOM, OR A MUSHROOM TEA?
There are no mushrooms, only folklore to try to explain this unique
natural process. Making kombucha requires a starter culture (very much
like a sourdough starter or yogurt culture) to turn tea into this
wonderful drink. Technically, it is a cellulose fiber mat (also called
‘scoby’ or ‘mother’). These cultures come form Nepal, China and
Siberia, some dating back thousands of years. Kombucha has to be shared
to be created. It is social; it connects people, something we could all
use more of today.

bring the benefits of this ancient beverage to you. The
process of producing kombucha generates glucuronic acid, which,
according to Sally Fallon (Nourishing Traditions, New Trends
Publishing, 1999), can be "a powerful aid to the body's natural

caffeine in coffee per bottle. With 65 calories or less, antioxidants
