These gut healthy spring salads will leave your gut and your taste buds happy!

Blueberry Brussel Sprouts Salad

Serves 4

This irresistibly fresh salad is bursting with a unique mix of spring flavors and gut healthy ingredients!

INGREDIENTS

For the salad 

  • 1lb brussels sprouts, thinly chopped
  • 1 bunch kale, thinly chopped
  • 1 cup fresh blueberries
  • ½ cup sunflower seeds (or substitute for your favorite seed or nut)
  • 1 avocado, pitted, peeled and chopped
  • ¼ red onion, thinly chopped
  • 1/3 cup crumbled feta cheese
  • salt and pepper to taste

For the lemon turmeric dressing

  • ¼ cup fresh lemon juice
  • 1” fresh ginger, peeled
  • 2 tsp. ground turmeric
  • 3 tbsp. olive oil
  • 1 tbsp. apple cider vinegar
  • salt and pepper to taste

DIRECTIONS

  1. In a blender, place lemon juice, ginger, turmeric, olive oil, apple cider vinegar, salt and pepper and blend. Adjust and add seasoning to your liking.
  2. In a large bowl, add chopped brussels sprouts, kale, onions, and sunflower seeds and toss.
  3. Top with blueberries, avocado, feta cheese, salt, and pepper.
  4. Drizzle salad with lemon turmeric dressing and serve.

Leafy Green Salad

Serves 2

Leafy greens are great for your gut, but we must admit the star of this show is the tangy Greek yogurt dressing! This could quite possibly be your new go-to salad, you’re welcome.

INGREDIENTS

For the salad

  • 10oz baby spinach
  • 4 tbsp. fresh cilantro
  • 4 tbsp. fresh parsley
  • 2 tbsp. fresh green onion, sliced
  • 1 large radish, sliced
  • 1 avocado, pitted, peeled and sliced

For the tangy Greek yogurt dressing

  • ½ cup plain Greek yogurt
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. white wine vinegar
  • 1 tsp minced garlic
  • 1/3 cup extra virgin olive oil
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ½ tsp. dried dill

DIRECTIONS

  1. Combine Greek yogurt, lemon juice, white wine vinegar, minced garlic, olive oil, salt, pepper and dried dill into bowl. Whisk together until all ingredients are mixed and refrigerate until ready to use.
  2. Combine baby spinach, fresh cilantro, fresh parsley, sliced green onion, sliced radish in a bowl.
  3. Top with avocado and drizzle with dressing.
  4. Enjoy!

Blackened Salmon Salad

Serves 2

Salmon is jam-packed with omega-3 fatty acids which can help reduce inflammation in your gut and help with digestion. This hearty salad is good and good for you!

INGREDIENTS

For the salad

  • 2 salmon filets, skin and bones removed
  • 1 bunch of arugula, torn
  • 1/3 cup kalamata olives
  • 1 red onion, sliced
  • 1/3 cup gorgonzola cheese, crumbled

For the blackened seasoning

  • 2 tbsp. ground paprika
  • 1 tbsp. ground cayenne pepper
  • 1 tbsp. onion powder
  • 1 tsp. salt
  • ½ tsp. ground white pepper
  • ½ tsp. ground black pepper
  • ¼ tsp. dried thyme
  • ¼ tsp. dried basil
  • ¼ tsp. dried oregano

For the lemon vinaigrette dressing 

  • 1/3 cup extra virgin olive oil
  • 1/3 cup fresh lemon juice
  • 1 tsp. Dijon mustard
  • 1 tsp. minced garlic
  • salt and pepper, to taste

DIRECTIONS

  1. Combine olive oil, lemon juice, Dijon mustard, minced garlic, salt and pepper in bowl and whisk until all ingredients are mixed.
  2. Arrange bed of arugula, kalamata olives, sliced onions and crumbled gorgonzola cheese on plate.
  3. In a small bowl, mix paprika, cayenne pepper, onion powder, salt, white pepper, black pepper, thyme, basil and oregano.
  4. Evenly brush top of salmon filets with olive oil and coat with blackened seasoning.
  5. In a large skillet, cook salmon, blackened side down, for 2 – 5 minutes. Flip filets and continue cooking until seasoning and fish are easily flaky with a fork.
  6. Remove salmon from skillet and add to top of arugula salad.
  7. Drizzle with lemon vinaigrette and enjoy!
